What a bomboloni is, and how it differs from a doughnut

A bomboloni is an Italian filled doughnut: a round, yeasted, sugar-rolled bun with no hole, piped full of cream or custard after frying. The absence of the hole is the point — it leaves room for filling, so the ratio of cream to dough is much higher than a ring doughnut with a glaze.

Compared to a supermarket doughnut, the dough is less sweet and more bread-like, which is what keeps a heavily filled bombolini from becoming cloying. They are made in small batches and filled close to the time they go out, because a bombolini filled too early goes soft.

The seven flavours
